Sitting along A1A in Satellite Beach Florida is a Republic of a different kind. It's not a banana republic nor is it the Conch Republic, but it is a pizza republic, Cibelli's Pizza Republic to be exact, and we want to become citizens.
The huge bouy marker on the outside and the "Laid Back Beach Life" sign on the canopy tell you what you are in store for, but it doesn't tell you what your taste buds are in store for. Thatched umbrellas for the outside tables, let you know that the "Laid Back Beach Life" is in full effect. When you walk through the door, you enter a little piece of Key West, with tiki heads and surf related pictures all over the walls. The counter is painted an eye appealing turquoise that grabs you and draws you over to order. Other than the outside seating, there is a large open area in front of the counter with tables closer to the walls, and then a small room full of tables to the side.
The pizzas come in sizes from 10 to 24 inches, and have whole dollar pricing. What that means is, there is no tax or change to deal with, the price you see is the price you pay.
Let's talk about that pizza. It comes out in quick time and still piping hot from the oven. You are first struck by the appearance of this pie. It's absolutely beautiful. It has a wonderful eye appeal that makes your mouth water. It has the largest pepperoni of any pizza we have had so far, and the way they set their pizza up, is true perfection. They start with dough, then a wonderful smooth, mellow sauce. They then split their Baccio cheese in half. The first half goes on right after the sauce, and if you know Baccio cheese, it has a nice saltiness that cuts through the creaminess of the cheese. All that together gives you a great stringy pull. After the first half of the cheese, goes your choice of toppings, in our case it was that large Maragerita pepperoni. Then the final layer of cheese rests on top to hold everything together.
We know that they have their own motto, but after eating this pizza we came up with one of our own: Laid Back, Smooth, and Mellow. For us that is the perfect phrase for this place. As we said before, you have that laid back Key West vibe, and are greeted by the friendly staff. The service is top notch, and their pizza is the perfect representation of the entire vibe of the place.
We have never had a pizza that more represented the place we are in, but this one truly does.
Guy here, I have to butt in for a second. When we were getting to the end of our pizza experience here, I began to realize that I had ordered the wrong size pizza. I went on the portion description on the sign and ordered the 14 inch instead of their Large 18 inch.
By the time we were on our last slice, we were already wanting another pizza, not because Guy ordered the wrong size, but because the pie is just that good. Watch our video to see our immediate reaction and why we liked it so much.
Cibelli's Pizza Republic was spotless, with a great view of the kitchen from the front counter. They put a lot of pride in every part of what they do, and it shows. They really want to know what you think of what you are having and they will even ask you if there is any way they could improve. We couldn't find anything that they could improve on, and that is why we gave them our highest rating of 5 Dancing Pepperoni.
